    Default Buried in Bing cherries!

    I was given a big whack of organic Bing cherries and now that we've nearly eaten our fill (and given some away), I am thinking of making my usual blackberry/cherry brandy jam. But I'd also like to try something different rather than just freezing the rest for more jam.

    Anyone have any ideas? It's my mother's birthday this week and I'm going to use some in a cake, but I need more suggestions. Help!

    If nothing else try to make some different jams..add an equal part of some other fruit and experiment.

    And how can you *ever* get enough fresh cherries to be sated?


    I suggest trying a cherry upside down cake!

    Or maybe a 'cherry bounce' (old time cherry cider/liquor! yeah!)

    That's a good idea! I"ll get hubby to drag out the juicer.

    We've been eating cherries non-stop for two weeks. I never thought I'd get tired of them either. I'll probably bake an angel food cake and decorate it with sliced cherries and whipped cream for my mom's birthday.

    I posted a recipe for a Black Forest Buche de Noel a while back but you can easily make a cake with it instead and it's amazing.

    Can you send some my way??? I love bing cherries.

    Blueberry and cherry season is over here, so no more of these for us till 08. Summer fruit is so awesome, I alread miss it and we're not even in October yet. Lol.

    i love cherry compote. well, any compote. it's fresher and less sweet than jam. it doesn't keep as long as jam but i bet you could freeze some too. it's yummy with scones, in yoghurt, etc...
    found an easy recipe on bbc.com:

    Preparation time less than 30 mins

    Cooking time less than 10 mins

    Ingredients
    ½ cup caster sugar
    250g/8oz frozen cherries
    ¼ tsp ground cinnamon



    Method
    Place sugar in a small saucepan with 110ml/4fl oz water over a medium heat. Stir to dissolve, then boil until liquid is reduced by half. Add cherries and cinnamon and cook for 2 minutes. Remove from heat and cool before spooning over cakes.
    personally, i'd nix the cinnamon and add lemon juice and fresh mint leaves instead.

    cherry crumble is also awesome and easy to make.
    there's also cherry cheesecake.
