    Default Cooking diagnosis thread

    I need a tip. Whenever I make burger patties or meat balls, they don't seem to hold their shape and fall apart. Why is this?

    yep. a better binder

    you can use eggs and bread crumbs, water soaked in water and broken up or water soaked oatmeal.

    sometime a little tomato paste gives an interesting taste

    I've been known to put leftover baked or mashed potato in mine

    Do you 'rest' them in the fridge for a few minutes before cooking?

    Hmmmmmmmm are you cooking them in a really hot pan/oven to seal them first and then turning down the heat to cook them through more gently? What meat are you using?

    Roll or shape them longer. I find the more you squish them around the better holding power they have

    K, I've tried beef and turkey recently. Maybe my pan wasn't hot enough.

    You do also need a certain amount of fat to bind the mixture so if you are using very lean beef with naturally 'dry' turkey meat it's more likely to crumble.

    Maybe you added too much bread crumbs...making it too dry to stick and stay together?

    My salisbury steaks (beef) didn't fall apart badly but yea my turkey meat balls did.

    Icepik, you might be right, I might have added too much bread crumbs.

    I learned this from my Mom: use half a teaspoon of corn starch.

    When you're mashing the ground meat together, put half a teaspoon in the mix so it evenly distributes.

    I believe this will work for you as it does for me.
