    Default Does anyone here can or preserve summer fruits and veggies?

    If you do (as I do, especially fruit), share your tips here. There's nothing like opening a jar of organic preserves in darkest January to lift your spirits.

    I can a hungarian dish called leczo. It's basically stewed onions, tomatoes and various coloured peppers. It's so yummy and makes dinner prep take about 30 seconds. Plus, it costs about $50 to make 50 jars, whereas in the winter, a couple of peppers would cost an arm and a leg!

    I do water bath canning and have not yet had anything go bad (knock on wood).

    I also pickle beans and asparagus, and it's blueberry season, so I'll be getting some of those, although I usually dehydrate those. Mmmmmm blueberry pie and ice cream!

    that's cool. do you have a dehydrator? (I've seen one at Londong Drugs, heard of ppl making their own organic beef jerkies n such). I bought a big bag of dried blue berries from Costco but the berries are sweetened so I don't like them much. I'd love to make my own.

    I just freeze my blueberries in Ziploc bags.

    Leczo sounds a lot like ratatouille, which I freeze. A Hungarian friend of mine in Montreal used to make something similar so I'm wonedering if it's the same thing.

    I can and I can weird things, like Amish Fake Apple Pie filling made from squash and pickled Zucchini rings..beats the crap at the grocery store.

    Moomies - I don't have a dehydrator, but it's super easy. I buy those foil oven liners, spread the berries out so there's only one layer and room in between, turn the oven on to it's absolute lowest setting, open the oven door slightly, and leave it there for awhile. Not very scientific, but I've made beef jerky and dehydrated peas and corn the same way.

    PB - it's probably the same thing, since a lot of dishes including goulash are made with it. There are regional variations, but the hungarians I know all make it.

    One regional variation that I rue learning is to add sour cream to a dish once it's served. Growing up, we never used sour cream, then visited some hungarian friends who put sour cream on all their stews. Let's just add a bunch of fat to the dish! But it sure does taste good!

    I am planning on using my pears(if the heat wave and impending drought does not ruin them) to make and can pear butter and pear honey! Sooo good but so laden with calories. I may try to make a jam out of my black chokeberries as well..although it takes a ton of sugar and some other sweet fruit to make them palatable. In fact I am eating some that I made a couple(2) years ago now with some Italian bread. Yummy!..

    *damn I need to stop this and lose some pounds! *

    My mom has a can of her own roasted peppers in olive oil. They're pretty good, really nice in sandwiches

    Peach Trees are notoriously short-lived..most do not make it beyond much more than a decade. They grow fast and will produce the 1st or second year... good replacements would be Reliance, Redhaven, Contender, Madison, Jefferson(any of the presidential series would be good..except for the new one..'Dubya'..that one is a real dud! ).

    *also anything with 'Har' in the beginning..like Harkness or Harglow.etc. From Harrow Research in Ontario..all good hardy trees.*

    Thanks for the advice. Knew something was up when it produced an unusual amount of fruit last year. Hoping to replace it with another white peach tree.

    We have some fruit trees, and we make damson gin every autumn, and my husband makes his own very dry, very strong cider. That counts as preserving, right?

    Sure does. I've made blackberry cordial with vodka and brandy. Very smooth, and packs quite a punch.
