    Default HALP!!!! Runny Yule log filling.

    Making the type of filling that is essentially a custard combined with the butter/icing sugar icing. Similar to this: Cooks.com - Recipe - Yule Log Cake Usually this works but this batch has turned out runny. Anybody know how to salvage this?

    Can you add more confectioners sugar to it?

    There's no way to fix it without seriously changing the flavor.

    More sugar might work but nobody in the family likes things too sweet which is why this type of filling.

    Desperately trying to avoid having to throw it out and start over. Especially not knowing why it went wrong this time. I'd like to prevent that from happening again.

    The problem is probably humidity. There is a stabilizer that will fix it but you have to use it at the beginning. Go to Stabil-Creme Icing Stabilizer
    ...Stopped smoking on March 8, 2011. Was trying to put a fancy ticker in my signature but it didn't work...

    I'm currently using the denial method. It's in the fridge and I hope that when I open it a miracle will have occurred. Eboni, you're probably right about humidity.

    I was thinking of trying unflavoured gelatine dissolved separately with minimum liquid then added but am not sure.

    I was going to suggest the denial method as you put it, lol You never know, it could be that it was just being over mixed or something.

    The gelatine could be a good idea although I feel like it could go wrong too, maybe making it too gummy.

    You're probably best starting over from scratch and using a tad less of the liquid ingredients than the recipe calls for.

    Is it already in the log? Maybe cooking it some more might solidify it a bit?

    Agar-agar success! (yeah, I still call it gelatin out of force of habit) Chilling alone did not work. It is now in beautiful log form. Adding shrooms later today
