Default Need a vegetarian menu for small dinner party

Hello everyone! I am coming to you for your wise advice. I am throwing a small dinner for four fabulous lady friends of mine. Can someone suggest an elegant yet not fussy dinner menu One of ladies is Italian and a great cook so I was thinking of nothing Italian. I appreciate all your suggestions and help!

You could do Southern-turnip greens (frozen) cooked in veggie bouillion. Black eyed peas with Rotel(wonderful spicy flavor )and cornbread. Also cheese grits & iced tea. I like this cheese grit one by Alton Brown, from Food Network: Cheese Grits . Sliced tomatoes with Cavenders Seasoning spinkled on top.
Also, pecan pie or coconut cake. Store bought!
I didn't start out to collect diamonds, but somehow they just kept piling up.-Mae West
