    Red face I need some TASTY healthy recipes, anyone?

    I'm trying to eat healthier and force my boyfriend to do the same but I only know so many good recipes and they get tiring after awhile. Does anyone have any delicious recipes that are healthy and calorie wise? I'm trying to stop eatting red meat and most dairy products since i've started experiencing discomfort in my stomach and trouble with indigestion. I'm not a huge fan of fish except canned tuna since I don't live where I can buy it truly fresh. We really enjoy salads, pitas, soups, skinless chicken breast and brown rice and pretty much every type of vegetable or fruit. Also, is there any brand of juice frozen or not that really is good for you and not full of sugar? I'm done with drinking soda pop. Any suggestions would be much appreciated. Thanks guys!

    My wife and I are healthy and fit and are big fans of soups. We make huge pots of them and then save them so that we can have them for lunch. Typically, we have:

    • Lentil bean soup
    • Black bean soup (I'm surprised how many of my coworkers have never heard of it and are repulsed by the idea of black beans)
    • Great northern bean soup
    • Split pea soup

    We always buy bags of dry beans/peas because they are usually very cheap and keep a very long time before they have to be cooked. If you want to know how we fixed them, I can tell you that, too.

    Is great northern bean soup the one with white whine and bacon? If you can and have time, do post recipes please.

    I love sweet potatoes... they're full of carotene and fiber and they taste great roasted with some olive oil and a sprinkling of sea salt and fresh cracked pepper. I love to do the same with eggplant and squash.. just toss them into the oven and eat over some salad greens or as a side dish or even puree them into a soup.

    I've never tried eggplant. What sort of taste is it? Is it similar to any other veg?

    Hmm.. if I had to describe eggplant I'd have to say it's like squash. Some people don't like the seeds but I don't mind them... you can really jazz them up with flavor, though, by using spices and herbs.     You can also make eggplant "fries".. I don't know how healthy they would be, though. Broiled eggplant "fries"
