I haven't read all your responses yet but yes Americanized anything (Italian and Mexican make me the angriest personally) is typically a disgusting rape of the authentic ways of cooking UGH!
I HATE AMERICANIZED ITALIAN WITH SUCH A PASSION THAT SOMEDAY you may catch me on the news being charged with burning down an Olive Garden or two...

Or maybe I should say - only for the "tourist" trade.
I went to college in a city with a large India/Pakistani population, we used to eat at "restaurants" that were for the community not for the "tourist"/white trade.
When I stay with my friend (who is a Sikh) I loose weight - maybe I should see her more often?
i was at this chain of restaurants the other day called Il Fornaio and i cannot believe the slop they served me was supposed to be what it was, disgusting. it was like dog food with runny cream slop all over it and thats Italian?! NO! I DONT THINK SO! i was glaring at the cook the whole time (cuz u was seated right by them and its an open kitchen type thing) he was like,
not to mention places melting a pound of cheddar cheese on a dish w/ a toritilla wrapping something and calling it Mexican! wtf
i almost barfed all over this enchilada i was trying to eat the other day at lunch, really, i love cheddar cheese but too much of a good thing is revolting. the fumes coming off this thing had my eyes go crossed and i almost fell back on the floor in my chair
and to novice: yes there are some indian dishes that are lowfat but a lot aren't. that was my only point. we go to the non-touristy ones and probably gravitate to the high fat ones - vindaloo makes me swoon.
I love vindaloo, and I can't tell you how many times a waiter has asked "are you sure?" when I've ordered it. They must be thinking 'oh this little girl has no idea what she's in for'. But I love hot food.
My mother used to joke about the OG commercial where Uncle Giorgio comes over from Italy. They guy in the ad says 'When Uncle Giorgio came to visit from Italy we took him to Olive Garden' and my mom would say 'And then he shot us'

I don't get the big deal about Olive Garden either. Both times I've been in my life were at the insistence of other people and each time I decided I never really wanted to go back. But every time we go near the Burbank location there are lines out the door and huge waits to get in. Every. Single. Time. People LOVE that place and I don't quite understand why.

Going back to Vietnamese food, I'm not sure if someone has already mentioned this, but isn't Pho a Vietnamese soup? That stuff always seems pretty healthy - rice noodles, clear soup with little oil, and lean pieces of beef floating in it. Also lots of healthy bean sprouts on the side.
