    I've made that sandwich before and pro-tip: you don't have to wilt the spinach at all. I actually found it a waste of time because then you have to squeeze all the water out of the spinach. Just finely dice up the artichoke and spinach. I also added a touch of parmesan, but I like things on the salty side.

    That sounds close to the one I found. But now I just chop the artichoke and spinach finely, mix with about half a round of Boursin and about 2-3 tbsp of sour cream (just enough to have everything moistened and blended well), sprinkle in garlic salt to taste.

    I've tried it with a bit of parmesan before when I had some leftover that needed to be used up and once with some pine nuts that I gave a quick toast on a cookie sheet. Both were good.

    One hack I recently found for good grilled cheese sandwiches is...mayonnaise. Who knew? Use it instead of butter.

    Yes Mayonnaise. I love that on grilled cheese, put in a slice of ham and you have a croque monsieur. Yummy.
