I think she had her nose done. I saw younger pictures of her and it looks the same then, but then in Hackers it was bigger and now it's smaller again.

There is an animated picture of Jolie before nose job, then it morphs into what she looks like now. It's kind of funny. Her new nose is much more streamlined and elegant. The old one was kind of potato-ish.

Her profile doesn't look anything like a frying pan.  Besides, her nose job just streamlined the width of her nose and didn't do anything to the length, thus making no difference in her profile. She has a beautiful profile:

^^ I must admit Angelina was so stunning in Mr and Mrs Smith, she was that striking I couldnt take my eyes of her (and that doesnt happen to me often).....she was flawless back then

Apparently not EVERYONE thinks so, I think she looks like an ape when she turns to the side. Very flat. It's just my opinion. And in Mr and Mrs Smith (what a shit movie btw) she looked emaciated and veiny and gross, and nothing like the voluptuous creature she used to be. I personally don't think anything she's had done is an improvement in any way.
