Tom is such a pathetic MORON! I don't believe for one second that he & Katie have a new baby together. If they did, i believe that TomThumb would have been showing off pictures, that he the "doting new dad" snapped of his precious new baby & fiancee. The way he's babbling on & on in public to anyone who'll listen about how he's ecstactic to even CHANGE DIAPERS?!? Yet this "super happy, proud new dad" has NOT shown off a picture of his "pride & joy"???? (Especially when he IS aware that there are many people out there that don't believe for one second that a new baby even exists! And in light of the fact that this is all an elaborate hoax the success of which is dependent upon people actually BELIEVING that there really is a new baby, you'd think he'd be doing ANYTHING to prove/show that there IS a baby!) He hasn't yet produced a photo of "his new baby" because there is none! At this point anyway.

I agree. I think it is painfully obvious that the DREADFUL name "Suri" DEFINITELY has some sort of tie(s) to Scientology. (Of course it does! Did any of us think they would actually give "their baby" a name withOUT ties to Scientology? LOL) Like you & others have pointed out, Surrey England is where L.Ron Hubbard had a home, and Surrey is where the Scientology Headquarters are. Definitely a strong possibility that that's why TomThumb picked that (*cleverly* re-worked spelling version of) that name.
OR as i've seen a couple people point out, there is also a strong possibility that TomThumb the egomaniac wanted "his daughter's" name to be an anagram of his OWN name, since he's SO *all-important*:

I totally believe this is what he did. I think it was probably a combination of BOTH things, personally. He probably thought he "struck gold" (and thus started leaping up & down on the nearest couch) when he discovered this anagram of his own precious name, PLUS with it being a reference/connection to L.Ron Hubbard.
In any event, it's a TERRIBLE name. Like you pointed out, "Katie is not a real name", yet SURI is??? All i can think of when i hear this awful-sounding name is, in the future, someone introducing her: "And we present Miss Suri Cruise!". Sounds like the word "misery". Gee, what a GREAT word to have your name sound like!

About Katie being hidden away right now: In my opinion what is probably going on is that they (TomThumb and his band of merry Scientologists who are helping him to mastermind this whole ridiculous, elaborate hoax) are still waiting for the delivery of the baby they are adopting or awaiting the birth by the surrogate, or something like that. What i AM sure of as to where Katie is, is that she is NOT at home breast-feeding and tending to her & Tom's "biological child". No such thing exists!
